Sharing 3 of my favourite smoothie recipes – a peanut butter smoothie, a citrus green smoothie, and a delicious berry and coconut milk smoothie. All easy to make and all so so delicious!
Kicking off the New Year – Simple and Healthy Smoothie Recipes!
One of my new years goals was to jump start my days with breakfast. Sounds simple, right? Well for me…not so much! Try as I might, breakfast has never been something I enjoy, look forward to, and much less make time for. Unless I am in full on weekend mode, I have very little interest in making or eating breakfast. However, over the years the only thing that has stuck with me consistently (consistently inconsistently if I’m being honest ;)) is smoothies.
Smoothies are easy to make (with the exception of cleaning the blender, amiright?!?) and they can be super healthy because you can pack them with full with nutrient rich fruits, vegetables, seeds and milks. Today I am sharing 3 of my favourite smoothie recipes. They are all simple and healthy, easily adaptable depending on your dietary needs, and only use ingredients that you will be able to find at your local grocery store. Read along below for a peanut butter smoothie, a citrus green smoothie, and a berry coconut milk smoothie. These 3 smoothie recipes are all very different but all oh so delicious!
Starting off Simple with a Coconut Milk Smoothie
This is a classic! This berry smoothie is perfect for a new smoothie-er who may not be ready to try anything too different (like the 2 below!) just yet. Blueberries are the key player here – they’re one of the best fruits to eat making this a powerful morning drink. I love the combination of vanilla with blueberry, it’s especially perfect for the winter, so the vanilla yogurt is a great addition to this smoothie. If you wished to make this smoothie vegan, you can double the amount of coconut milk and add a dash of vanilla syrup.
Ingredients for the Berry Coconut Milk Smoothie (1 serving):
- 1/2 cup coconut milk (or about 6 coconut milk ice cubes)
- 1/2 cup vanilla yogurt
- half of a frozen banana
- 1 cup of frozen blueberries
- 1 teaspoon coconut flakes and more to garnish
- teaspoon of honey (can be substituted with maple syrup or omitted depending on your sweetness desires)
How to Make a Smoothie (and a super smooth one at that!)
These directions go for all the below smoothies. And while I reaaaallly don’t think I need to tell you how to make a smoothie, there are a few handy tips. You will need a blender or a food processor – I admit that my blender is far from great (does that really come as a surprise given my #nokitchentools life?!) but even it will get the job done. Put your ingredients in the blender starting with your liquids at the bottom. From here add in your soft ingredients like yogurt, honey or fresh fruit and then put frozen fruit and ice cubes on top. PRO TIP: freeze your choice of milk in an ice cube tray, it will make your smoothies wayyy smoother and nice and cold too!
A not so typical Green Smoothie
I admit that I have never been a fan of green smoothies. In my experience all green smoothies just taste too…well, green. This one is different. It is punchy with ginger and parsley but sweet with the apple. Definitely my style! Since the only frozen fruit in this smoothie is the apples, I definitely suggest freezing your coconut milk into ice cubes to give this green smoothie a nice smooth texture.
Ingredients for the Citrus Green Smoothie (1 serving):
- 6 coconut milk ice cubes (or 1/2 cup coconut milk)
- 1 green apple, peeled and frozen
- juice from 1 small orange (just hand squeezed is great)
- juice from 1/4 lemon
- 1 teaspoon freshly grated ginger
- 2 tablespoons parsley
- handful of kale
- 1 teaspoon of honey (or maple syrup or none)
And How about a Peanut Butter Smoothie?
Guys, this is basically dessert for breakfast. If you like peanut butter this smoothie is a serious winner! You can substitute the peanut butter for any nut butter or wow butter to make it nut free. This smoothie is a definite treat but with almond milk, peanut butter, and banana you are still getting some good nutrients to start the day. I topped this off with chocolate (ok not so healthy), a frozen banana, and cashews because I was feeling extra and it tastes AND looks good! Who knew a peanut butter smoothie could be so good?!
Ingredients for the Peanut Butter Smoothie (1 serving):
- 1 cup almond milk (vanilla or regular)
- 1 frozen banana
- 1.5 tablespoons peanut butter
- 1 teaspoon cocoa powder
- 1 teaspoon honey (or maple syrup or none)
