Vegan Avocado Chocolate Pudding - SO GOOD!

Are you a Fan of Chocolate Pudding…Now how about AVOCADO Chocolate Pudding?!

A few weeks back I was mindlessly watching Instagram stories (a daily occurrence, obv) when one of my favourite accounts, Lisa Homsy (travel blogger if you like travelling!) was eating a pudding that she had made of avocado, banana, and peanut butter. It woke me out of my instastory trance and I filed in my brain to the ‘try this later’ category. A healthy dessert like this would be such a hit at my family get togethers. Everyone in my family is trying to eat as healthy as possible but it’s undeniable that something sweet finishes off a meal so well!

Finally, last night I was feeling inspired to play around and try to make something similar to Lisa’s recipe. I knew I had to omit the peanut butter due to allergies in my family but bananas and avocado seemed like a good enough mix for me. Well, here’s the truth. Last night’s attempt was a total bust. I admit it. The bananas I had were a little unripe and seriously folks, never underestimate just how bad an unripe banana can be! So today, with a batch of still very unripe bananas, but the refusal to give up on the recipe, I tried playing around with a recipe using only avocado and the end result could not have been better!

This is a healthy dessert that seriously doesn’t taste like a healthy dessert hack AT ALL. After yesterday’s failed attempt Dan was a bit of a skeptic but he just got home and LOVED today’s product.

So, with all the recipe stars aligning, I discovered a great recipe, shot some decent photos and figured it would be a shame not to share it. Right?! Buckle up for the tastiest healthy dessert you’ve had in a while.

Vegan Avocado Chocolate Pudding - SO GOOD!

Ingredients for Avocado Chocolate Pudding:

  • 2 large and ripe avocados
  • 1/4 cup milk of your choice, I went for almond…because it’s what I had! I would have loved coconut but OH WELL!
  • 1/4 cup of chocolate chips
  • 1/4 cup cocoa powder
  • 4 tablespoons maple syrup
  • 2 teaspoons vanilla extract
  • 1/8 teaspoon of salt
  • coconut flakes and fruit for topping (optional but recommended :))

*Note on chocolate: if you wish to make this a vegan pudding or reduce the sweetness then opt for just 1/2 cup (or a bit under because the taste is powerful) of cocoa powder and omit the milk chocolate chips. I liked the mix with chocolate chips because they are a bit sweeter and I think it balances the bitterness of the cocoa powder just perfectly.

Blend Up your Avocado Chocolate Pudding

If you are doing the 1/2 chocolate chip route, melt the chocolate chips on the stove to make a liquid. Cut the avocado in half, remove the pit, and scoop all of the inside of the avocado into a blender. Add all of the above ingredients into too and blend until the consistency is very smooth. This mixture gets so soft that it truly has a consistency just like the pudding packs from packed childhood lunches (not that my mom ever bought me those :()! If you wish, top it off with coconut flakes, nuts, and fruit. I hope you enjoy this recipe as much as I did!
